Mexican Bean and Feta Salad
Ingredients
Kidney beans, cooked
Feta cheese, cubed
Shallots, finely sliced
Corn cob, steam and remove kernels
Cherry tomatoes, halved
Red capsicum, diced
Fresh coriander, finely chopped
Lime, squeezed
Avocado oil or olive oil
Tabasco sauce, dash
Jalapeno chili (optional)
Combine the first 6 ingredients into a large bowl. Combine the remaining ingredients into a small skrew top jar and shake to combine. You can add a little water to the dressing to help it spread further. Once you have your flavour right, toss it through the salad.
Serve it as is or as a side to any lean grilled meat or seafood.....
The best thing about salads is that you can put as much or little of each ingredient that you like so it is always suiting your taste!
